The Gran Paradiso National Park is the oldest in Italy, established in 1922 to protect the ibex, which is still the symbol of these mountains today. The local refuges and inns offer simple and tasty dishes, linked to the peasant tradition. 👉 Tip: Stop at a hut in Ceresole Reale to taste the polenta concia prepared with melted toma cheese and alpine butter.
